Today's goal? 
480 cookies. 
Yes, that is 40 dozen cookies.

I think I've bitten off a little more than I can chew, but I'm making it my goal tonight to make all forty dozen--and two lemon pound cakes and a batch of peppermint bark.

Why so much baking? Well, I offered my services for our work holiday party tomorrow night and for a Junior League event on Saturday. I also decided it would be a good thing to send a dozen {or more} cookies to each of my cousins who are still in college, in a care package sort of fashion.

There are four varieties of cookies on the menu for this evening: Nestlé Tollhouse Chocolate Chip Cookies, Peanut Butter Blossoms, {Iced} Super Sugar Cookies, and a variation of Chocolate Chip Crunchies. If I have time, I would love to make a couple of batches of the new hit cookie in our apartment: Cherry-Chocolate Chip Oatmeal Cookies.

Well, where do I stand? I have finished 12 dozen cookies and one pound cake. That leaves 28 dozen cookies, another pound cake, and peppermint bark.

Was I too ambitious? Maybe.

Here's the reality. By making the cookies for Junior League, I'm helping an organization I care a lot about...and by making cookies for my work party, I hold up my end of the bargain. The biggest thing I'm excited about with these cookies is the fact that I am sending out nine cake packages to our cousins {one to Wisconsin, one to Massachusetts, one to Vermont, two to Missouri, two to Maine, and two to Connecticut}. 

Even though there may be some miles between us, I want them to have a few comforts of home during finals season. I asked for their favorite kinds of cookies--and I'm going to deliver. My church sent care packages to me during my college years and I've never forgotten how good it felt to receive one. I'm just crossing my fingers that the postal service holds up their end of the deal--and gets their goodies to them in speedy fashion. 

Off to bake some more...wish me luck!

  1. WOW! That's a lot of baking. I love to bake and was thinking about baking something to send to my brother whose in FL. And that peppermint bark you are talking about sounds amazing - I'm a sucker for peppermint, I might need that recipe :) Happy almost Friday!!
